Not exactly Italian or German but....I did grow up in California, so....

It's sombrero time!
Enchiladas

12 flour tortillas
2 large cans Enchilada sauce
4-5 chicken breasts or 1 pound of beef (or a prepared rotisserie chicken de-boned with skin)
1 medium onion
1 small jar of chopped chiles
1 pound grated cheddar and monterey cheese

Boil and shred chicken or brown meat
Sauté the onion. Add meat, chiles, a 1-1/2 cans of the sauce. Let simmer for at least 20 minutes
Place above sauce on tortillas
Sprinkle with cheese (save some for later)
Fold together and place seam side down in casserole
Pour rest of enchilada sauce covering all the wrapped tortillas
Sprinkle rest of cheese
Bake at 350 for 30 minutes
